Ingredients

  • 2 tbsp SACO Cultured Buttermilk Blend
  • 3 ½ cups flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ¼ tsp cloves
  • ½ cup granulated sugar
  • ¾ cup unsalted butter cold and cubed
  • ½ cup pumpkin purée
  • ½ cup water

Coffee Glaze (optional)

  • 1 cup icing sugar
  • 1 tsp instant coffee
  • 1 tbsp milk

Instructions

  • Preheat the oven to 400F and prepare 2 baking sheets with parchment paper.
  • Mix buttermilk powder, flour, baking powder, salt, spices, and sugar together in a large bowl. Once fully combined, add in cold butter and work into the mixture by hand. 
  • In a smaller bowl, combine the water, pumpkin puree, and egg. 
  • Create a well in the middle of the flour mixture and pour the wet mixture into it. Stir with a fork until a dough forms. 
  • Form dough into a large rectangle, about 1 inch thick. 
  • Cut dough into 8 squares and arrange onto baking sheets. 
  • Bake for 16 to 20 minutes or until golden.
  • Top with coffee glaze and enjoy!
