Ingredients

Muffins

  • 1 3/4 cups flour
  • 4 Tbsp SACO Cultured Buttermilk Blend
  • 1/2 cup sugar
  • 1 Tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 egg
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 1 cup canned pumpkin
  • 8 oz cream cheese cut into 12 even cubes

Streusel

  • ¼ cup brown sugar
  • ¼ cup pecans chopped
  • 1 tsp cinnamon
  • 1 tbsp butter

Instructions

Muffins

  • Preheat oven to 400°F.
  • In a large mixing bowl combine the first seven ingredients.
  • In a separate bowl beat the eggs; add water, oil and pumpkin.
  • Stir into dry ingredients until moistened.
  • Fill 12 greased muffin cups 2/3 full; place a square of cream cheese in the center of each cup.
  • Top with remaining batter.
  • Sprinkle with streusel.
  • Bake for 18 to 22 minutes or until done.

Streusel

  • In a small bowl combine brown sugar, pecans and cinnamon in a small bowl.
  • Cut in butter until crumbly.
  • Sprinkle over batter.
