Pumpkin Spice Cupcakes

Cupcakes
- 4 tbsp SACO Cultured Buttermilk Blend
- 2 â…“ cups flour
- 1 tbsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp cinnamon
- ¾ tsp salt
- ½ tsp baking soda
- ½ tsp ground ginger
- 1 cup water
- ¾ cup butter softened
- 2 ½ cups sugar
- 3 eggs
- 1 can pumpkin purée
Frosting
- 8 oz cream cheese softened
- ½ cup butter softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 2 tsp cinnamon
Instructions
- Preheat the oven to 350F and prepare your muffin pan.
- In a large bowl, cream together butter and sugar until light and fluffy.Â
- Add eggs, one at a time, followed by pumpkin. Blend until smooth.Â
- In a separate bowl, whisk together buttermilk powder, flour, pumpkin pie spice, baking powder, baking soda, cinnamon, salt, and ginger until well combined.
- Slowly combine dry mixture and creamed mixture, alternating with water and beating well after each addition.
- Fill each muffin cup ¾ of the way full.
- Bake for 20–25 minutes or until a toothpick comes out clean. Cool for 10 minutes prior to removing from the pan.Â
- For the frosting, beat together cream cheese and butter until fluffy. Add powdered sugar, vanilla, and cinnamon. Beat until smooth.Â
- Once the cupcakes have cooled completely, frost with cinnamon cream cheese frosting. Enjoy!
