Lava Cake
Skip the fancy restaurant and enjoy an indulgent Chocolate Lava Cake at home! Made with Saco Pantry Premium Cocoa for an intense chocolate flavor, these tempting little cakes are delicious and impressive. Serve your chocolate lava cakes with fresh raspberries and powdered sugar as an elegant garnish.

Ingredients
- 1 ounce semisweet chocolate finely chopped
- ½ cup butter cut into smaller cubes
- 3 eggs
- â…“ cup white sugar
- 2 tablespoons flour
- 4 teaspoons SACO Premium Cocoa
- 1 pinch salt
Instructions
- Preheat oven to 400 degrees F. Spray four, 6 oz ramekins with nonstick cooking spray and dust with cocoa powder.
- Place chocolate and butter in a heat proof bowl over simmering water. Stir frequently, scraping down the sides with a rubber spatula, until chocolate is melted (5 minutes). You can also microwave the chocolate and butter on high in 10-second increments, stirring until smooth.
- With an electric mixer, whisk eggs and sugar together until pale and thick in texture, 5-6 minutes. Incorporate melted chocolate, flour, cocoa powder, and a pinch of salt until combined with spatula or spoon.
- Spoon batter into the prepared ramekins and place on a baking tray.
- Bake until the sides are set but the middle is still jiggly (about 10 minutes). Let cool for 1-2 minutes before carefully picking-up ramekin with an oven mitt and placing an inverted plate on top. Turn over ramekin and plate, the lava cake should slide cleanly out.
- Serve with topping of your choice.
